Apple Mincemeat

3 cup ground suet
1 sliced orange
1 sliced lemon
Boil this for 30 minutes and then strain out sliced fruit.
Add the following to the liquid oil:
3 cups water
4 cups raisins
3 cups cooked finely chopped prunes
8 cups chopped fine (ground up) apples
1 1/2 cups citron peel
4 cups sugar
1 1/2 cups brown sugar
3 cups fruit juice
3 cups cider vinegar
1/3 cup molasses
2 tsp. salt
1/2 tsp. pepper
1 Tbsp. ground nutmeg
4 Tbsp. Cinnamon
1 1/2 tsp. ground cloves

Mix and Boil all together for 30 minutes, stirring well watching for burning.
Bottle in sterilized quart or pint jars.
Makes 4 - 6 quarts.
Boil in Water bath 20 minutes for quarts, and 25 minutes for pints.
This is a 70-year-old recipe from my mother, so to everyone who try’s my recipe I do hope you enjoy the mincemeat.
